Ingredients

  • 3 yellow peaches, halved
  • 6 slices prosciutto
  • 2 cups rocket
  • 1 tbsp olive oil
  • 1 tsp red wine vinegar
  • Shaved parmesan

Method

  1. Grill the peach halves cut-side down until char marks form.
  2. Toss the rocket with olive oil and vinegar, then plate.
  3. Top with the grilled peaches, draped prosciutto, and shaved parmesan.
