Chargrilled Corn & Black Bean Salad

Ingredients
- 3 corn cobs, chargrilled and kernels removed
- 1 can black beans, rinsed
- 1 heirloom tomato, diced
- 1 lime, juiced
- 2 tbsp olive oil
- Handful of coriander
Method
- Char the corn cobs on a grill or hot pan, then cut off the kernels.
- Combine with the black beans and diced tomato.
- Dress with lime juice and olive oil, then finish with coriander.
