Winter Citrus Olive Oil Cake

Ingredients

  • 2 cups almond meal
  • 3 eggs
  • 3/4 cup olive oil
  • 2 blood oranges, zested and juiced
  • 3/4 cup sugar
  • 1 tsp baking powder

Method

  1. Whisk the eggs and sugar until pale, then stream in the olive oil.
  2. Fold through the almond meal, baking powder, and blood orange zest and juice.
  3. Bake at 170°C for 40 minutes and cool before slicing.
